I’m Dr Stacey Fuller, a dietitian and nutrition scientist, with a passion for helping people navigate nutrition in a way that is practical, evidence-based, and empowering. I am based in Shellharbour NSW, providing evidence-based nutrition care to individuals and aged care providers across the Illawarra. I specialise in translational nutrition- turning complex evidence into practical, compassionate care that works in real life. I combine my research background, clinical experience and lived experience to help people make sense of nutrition in a way that is realistic, empowering and grounded in science.
I have a strong academic foundation in science and nutrition, with studies spanning biological and biomedical science, nutrition & dietetics, aged care, and advanced research:

Currently studying a Diploma in Dementia Care, University of Tasmania.
I have worked across diverse settings, including aged care, private practice, research, and rehabilitation/surgical hospital wards. This breadth of experience gives me a unique perspective on health and nutrition across the lifespan. I specialise in healthy ageing, dementia nutrition, metabolism and weight management, and I currently work in private practice, aged care, and as a science communicator through my Substack, Metabolic Rx. My approach is sensible and no-nonsense, focused on nourishment, function and sustainability rather than rules, fads or guilt.
My PhD training gives me rigorous scientific insight, but my real passion lies in bridging the gap between what research tells us and how people actually live. Nutrition happens in busy households, caregiving, shift work, ageing bodies and complex health conditions – not in perfect laboratory conditions. I focus on translating nutrition science into simple, realistic strategies that people, families and care teams can actually use.
Beyond my formal training, I bring personal experience navigating body stigma and societal pressures around weight. This lived experience fuels my empathy and strengthens my ability to support clients with compassion and practical strategies. I understand firsthand how confusing and overwhelming nutrition advice can feel, especially when it’s filtered through diet culture or anxiety. My approach combines evidence-based guidance with real-world practicality, helping clients develop a healthier, more sustainable relationship with food and their bodies- without shame, guilt, or restriction.
In short, I offer a unique perspective: a blend of scientific expertise, clinical experience and lived experience; someone who understands the challenges firsthand and has the clinical expertise to guide others successfully toward better health and wellbeing.
